3. It's very important to marinate the meat properly. I usually use a set of spices: cloves, pepper, nutmeg, cardamom or turmeric, but you can also use a ready-made spice mix (for smoking pork). Besides the spices, you'll also need to prepare a sauce that will serve as the marinade. To make it, blend red beans in a blender, then add some red wine vinegar, the spice mixture, and a little sugar (preferably brown sugar). Mix everything well and let it sit for a while.

4. After some time, marinate our pork with spices and sauce. Let it marinate for about 20-30 minutes.

5. Of course, it's best if the meat can sit in the refrigerator overnight—this way it will marinate beautifully and absorb the flavors of the spices. But if unexpected guests arrive, you can prepare smoked pork a bit faster. If you have time, let the meat marinate for about 2–3 hours. Place the steaks on a well-heated grill, brushing them in the middle of cooking with the remaining sauce. Mustard with spices also goes well with this meat—adjust to your taste.
