
Smoked sturgeon
Description
The recipe won't take much time. However, to get delicious sturgeon, you'll need plenty of time, so be prepared! I used one fish weighing 3.5 kg to make smoked sturgeon. However, during cooking the weight will significantly decrease, leaving about 1 kg of finished product, so take spices according to 1 kg. Check out the recipe with photos. Serve hot.

Rinse the fish, cut off the head, and gut it.

Also cut off the tail; we only need the body. Put the carcass into boiling water for 2-3 minutes. Then rinse with cold water—the skin will come off easily.

Divide the body into 2 parts.

Rub with salt and sugar, let it cure for 14 hours.

Then pour in the cognac and leave for another 6 hours.

Don't forget to turn the bird over occasionally.

Take the body, wipe it dry, and tie it up with strings.

Place in the oven for 1.5 hours at 80°C. Smoke first on one side. Note that the oven must have a convection setting.

And 40 minutes on the other side.

Remove, wrap in greaseproof paper, and refrigerate until ready to serve.

Thinly slice the ready smoked sturgeon and serve with vegetables. That's it!
