Rinse the meat. Remove the films. Cut into small pieces.

Pour 1 liter of water into a container.

Add to the water: 100 g of salt, 0.5 teaspoon of ground coriander, 10 black peppercorns, 2 bay leaves. Place the marinade over heat and bring to a boil. Simmer over low heat for 3 minutes.

Cool the marinade to room temperature. Place the meat in it and refrigerate for three days.

Remove the meat from the marinade and let it dry for 5-6 hours. If you don't have time to wait, pat it dry thoroughly with paper towels.
