
Puff Pastry with Sprats
Description
“Envelopes” with sprats can be made from any puff pastry, but they turn out more tender with yeast dough. Choose large, firm sprats so they do not fall out when you eat them. Green onions can be replaced with half-moons of yellow or red onion. Baking is done. Serve at the table.

Prepare all the ingredients you need to make puff pastry “envelopes” with sprats. Rinse the green onions, open the sprats and drain the oil, boil the eggs until hard-cooked, then cool them.

Lightly flour your work surface and roll out the puff pastry a little. Cut it into squares; I got 10 pieces.

Place one fish diagonally on each square of dough.

Peel the eggs and cut them lengthwise into five wedges. Place one wedge on each fish and garnish with green onions.

Join the opposite corners and pinch them together well. Place the “envelopes” on a parchment-lined baking sheet and brush the tops with egg.

Place the baking sheet in a hot oven and bake at 180 degrees for 20–25 minutes, until golden brown.

The baked goods are ready. Serve with tea.
