
Vegetable-filled parcels
Description
Hot, crispy, lightly fried rice paper rolls with filling are very easy to prepare. This is a great quick snack. Serve warm or chilled. Perfect with tea.

1. Dice the onion and bell pepper. Press the garlic. Cut the chicken into small pieces. Grate the cheese. Heat olive oil in a large skillet over medium heat. Add the onion and salt, and sauté the onion for 5 minutes.

2. Add bell pepper and cook for another 5 minutes. Add garlic and stir for 1 minute.

3. Add corn, beans, and chicken meat, and mix until well combined. Transfer the vegetable mixture to a bowl, season with pepper, and mix with grated Cheddar cheese and seasoning.

4. Melt canola oil or vegetable oil in a large skillet over medium heat. Meanwhile, place 1 teaspoon of the vegetable mixture in the center of each rice paper square.

5. Moisten two edges of each square with water and seal to form a triangle. Gently press the triangular pockets with your fingers to remove excess air.

6. When the oil is hot, place about 6 parcels into the pan. Cook for about 1 minute on each side until golden brown and crispy.
