
Blackcurrant Jam Pockets
Description
The recipe won’t take much time. The little envelopes turn out moderately sweet, crispy, and very tasty. Don’t try to put in too much jam. It will either leak out, or the envelopes will open up and the edges will stick up. If the jam is very thick, adding starch is optional. Such envelopes can also be made from yeast puff pastry, but before baking, the envelopes need to stand for 15–20 minutes in a warm place to rise.

Prepare all the necessary ingredients for making puff pastry turnovers with blackcurrant jam. Take the dough out of the freezer in advance so it can soften.

Add starch to the blackcurrant jam and stir.

Roll out the puff pastry a little in one direction and cut it into squares. Place jam in the center of each square.

Make little envelopes by joining opposite edges and pinching them closed.

Grease a baking tray with vegetable oil, and place the envelopes on it.

Place the pastry envelopes in a preheated oven and bake at 180°C for 25–30 minutes, until done. Remove the blackcurrant jam envelopes, let them cool, and dust with powdered sugar.
