Lavash envelopes with various fillings

Description

This golden-brown dish pairs perfectly with cold milk, kefir, hot tea, or cocoa. You can make it every day if you like, changing the fillings and adjusting the recipe to your taste. One thing is certain—making the envelopes is quick, simple, and doesn’t take too much time. Serve the appetizer at the table.

    Prepare the listed ingredients. Boil the potatoes in advance for about 30 minutes and let them cool slightly.

    Peel, rinse in water, and mash with a fork into a puree, sprinkling with a pinch of salt. If you like, add a little clarified butter, but the envelopes will be fried in vegetable oil anyway, so they will be rich and juicy.

    Add sugar to the cottage cheese and mix. You can also make a savory filling from cottage cheese by adding salt instead of sugar and chopped herbs.

    Last, dice the washed apples, cutting out the stems together with the seeds. Any apple variety may be used.

    Break the chicken eggs into a deep bowl and add a pinch of salt to the same bowl. Beat everything thoroughly.

    Cut each lavash into strips 10–15 cm wide. Place 1 tbsp of filling on the edge of each strip. Be sure to sprinkle the apple filling with granulated sugar.

    Wrap the filling in lavash two or three times and cut off the strip. Place filling on the edge again and wrap again. Make envelope-shaped portions from all the strips and fillings.

    Heat the vegetable oil in a skillet, then reduce the heat to medium. Dip each piece one at a time in the egg mixture and place it in the oil. Fry for 1–2 minutes per side until golden brown.
