Instructions
- 1
Step 1

Prepare thin lavash and the necessary ingredients for the filling. Grind the meat through a meat grinder in advance to obtain uniform ground meat.
- 2
Step 2

Grate the cheese on a coarse grater and add it to the minced meat.
- 3
Step 3

Peel the onion and finely chop it with a knife or blend it into a purée. Rinse the herbs and chop them finely. Add the onion and herbs to the ground meat and cheese.
- 4
Step 4

Sprinkle the mixture with salt and ground pepper and mix thoroughly.
- 5
Step 5

Cut the thin lavash sheet into equal strips about 10 by 25 cm in size. Place the strips in pairs, one on top of the other, in a cross shape. Place several tablespoons of filling in the center and press it down.
- 6
Step 6

Fold the bottom strip toward the center, covering the filling. Cover the top with the side strips. You should end up with a square envelope with the filling inside.
- 7
Step 7

Do the same with the remaining strips and the lavash with filling.
- 8
Step 8

In a deep bowl, beat an egg, lightly sprinkle with salt, and break it up with a fork. Dip the envelopes into the egg mixture one at a time, then turn them over to the other side. Lift the envelopes up so any excess egg mixture can drain off.

Step 9

At the same time, heat a skillet with a small amount of oil. Place the prepared pieces in the oil. Fry them over medium-low heat, covered with a lid, until the meat filling is cooked through. The envelopes should develop a golden crust on top.
- 10
Step 10

Serve the envelopes warm.

Step 11

Serve immediately or slightly chilled.
