
Canned cucumbers with ketchup
Description
A preservation recipe without unnecessary fuss. Pickled cucumbers with chili ketchup turn out unusual—anyone who likes variety is sure to enjoy them. To make spicy pickled cucumbers with ketchup, if you don’t have chili ketchup, add half a hot red pepper pod to each jar. You can also use plain everyday ketchup—the result will still be wonderful. You can pickle pattypan squash too if you like—put the cucumbers and pattypan squash in the same jar. Good luck! ;) Store the jars in a cool place for up to a year.

Wash the cucumbers and soak them in water for about an hour.

Wash, chop the greens, and peel the garlic.

Prepare a hot marinade from salt, sugar, and vinegar.

Add ketchup. Cool to room temperature.

Fill the jars with brine and sterilize for 15–20 minutes in boiling water.
