Canned cucumbers without vinegar

Description

Winter preserves at home. Canned cucumbers without vinegar turn out like barrel pickles—firm and punchy. They work well in dishes like solyanka or azu. Note that for fermentation we fill the jars with brine made from water and salt: a heaping tablespoon of salt per liter of water. Add sugar at the end, right before sealing, and only if you like a slightly sweet taste. Sugar is also an excellent preservative, so canned cucumbers without vinegar will keep well.     Place washed cucumbers, herbs, and spices in the prepared jars.

    Pour in hot brine up to the neck, cover with cheesecloth, and let ferment for 3 days.

    After three days, drain the brine, strain, and boil for 15 minutes. Add sugar (optional). Rinse the cucumbers in the jars twice with cold water. Pour in hot brine and seal the jars.

    The jars are sealed. Store for the winter.
