Canned asparagus
Description
Perfect for winter stocking. Below I'll go into more detail. The preserve is ready for winter storage.
Instructions
- 1
Step 1

Prepare all the ingredients.
- 2
Step 2

Wash the asparagus and pat dry. Trim the ends to the height of the jar. The trimmed pieces can be used later in other recipes.
- 3
Step 3

Peel the garlic cloves and slice them thinly. Remove the lemon zest in thin strips, avoiding the white pith.
- 4
Step 4

Sterilize the jar and lid you will use to pickle the asparagus ahead of time, using any convenient method. Place the garlic, mustard seeds, and lemon zest in the jar.
- 5
Step 5

Fill the jar with asparagus, tips pointing up. Pack the asparagus tightly enough so it does not tip over in the jar.
- 6
Step 6

In a small saucepan or sauté pan, combine the water with rice vinegar. Add the salt and sugar. Bring to a boil and simmer until the salt and sugar have dissolved.
- 7
Step 7

Pour the hot marinade into the jar.
- 8
Step 8

Tightly screw the lid onto the jar.
- 9
Step 9

Turn upside down and leave until completely cooled. Then store the jar in a cool place.
