Apple confiture

Description

Perfect for winter pantry supplies. Confit is a jelly-like jam that does not have to be very sweet. If you do not like cloyingly sweet jams, this is the perfect treat for you. When making apple confit, you can use a minimal amount of sugar or leave it out entirely. Cloves give this confit a special note. It is the addition of cloves that gives the confit a warm, spicy note, which is incredibly delicious. See the step-by-step recipe below. The preserve is ready for winter storage.

    1. Prepare the ingredients. Wash the apples.

    2. Cut into wedges, removing the seed pods.

    3. Transfer the sliced apples to a saucepan and add a small amount of water — just enough to cover the apples. Add half the sugar and cook for 20 minutes until they are translucent and soft. Purée the apples in a blender until smooth. Add the remaining sugar, cloves, and 20 grams of gelling sugar. Mix thoroughly until all the sugar has dissolved completely.

    4. Cook over low heat for 15 minutes until thickened. Spoon the hot jam into sterilized jars and seal with lids. Store in a cool, dark place.
