Blackcurrant Jam

Description

A simple way to prepare ahead for storage. Since childhood I remember how I didn't like picking blackcurrants—it was quite a long and laborious process—but my grandmother always encouraged me and said that in winter I would gladly enjoy delicious jam made from these berries. And indeed, in winter a jar of this treat always lifted my spirits as if a real celebration were beginning. And if you too like to spread something sweet on a slice of bread, then I'll be happy to tell you. Jars keep for up to a year in a cool place.

    Sort through the red currants and rinse them under cold water, then spread them on a towel to dry.

    Now we need to squeeze the juice out of the berries. You can, of course, do it by hand, but it will be a lot of hassle, so I use a juicer.

    Now add as many cups of sugar as you have cups of berry juice—a 1:1 ratio.

    Mix the juice and sugar in a saucepan and place it over heat. Cook the jam over medium heat for 20–30 minutes.

    Pour the finished jam into sterilized jars and seal with lids. Store in a cool place.

    And in winter we enjoy the wonderful taste of currant jam.
