Peel the ginger and grate it on a fine grater.

Choose softer pears if possible — the confiture will turn out like jam. Peel the pears and cut them into small pieces.

Place grated ginger, sliced pears, and sugar in a saucepan and squeeze the juice from half a lemon. Mix everything together, cover the pan with a lid, and let stand for one hour.

When the time is up, remove the lid and place the pot on the heat. When the liquid comes to a boil, skim off the foam and cook the confiture for 30 minutes. Then spoon the finished confiture into sterilized jars and store in a cool place.
