
Apricot jam
Description
Apricot jam works well in cake fillings and layers. Cottage cheese, buns, even a simple butter sandwich are much improved by pairing with apricot jam. The main goal is for the finished apricot jam to have a jelly-like consistency. You can adjust the ratio of sugar to fruit as you like. Good luck. Serve at the table or store in the pantry.

For the confiture, use large Prischepa apricots.

Wash the apricots and cut into wedges.

Cover with sugar and leave for 4 hours or overnight so the apricots release their juice.

Bring the jam to a boil and simmer for 5 minutes over low heat. Set aside to cool for 4 hours.

Add the pectin and cook the jam for another 10 minutes.

Blend the jam in a blender until smooth.
