Description
Making "Cherry in Chocolate" candies is quite easy. The step-by-step instructions include two recipes: one very simple and the other slightly more complex. In any case, the candies will definitely turn out great. Warning: this recipe is intended for adults. For children, you can make similar candies without soaking them in cognac.

Prepare the ingredients for making candies.

Wash the cherries and remove the pits.

Pour the cherries with brandy or dessert liqueur. Cover with film and let it infuse for 12 hours.

After 12 hours, drain the cognac.

Break the chocolate into pieces, place it over a "double boiler" so that the bottom of the chocolate bowl does not touch the water.

Use a toothpick to take a cherry and dip it into melted chocolate.

Transfer the chocolate-covered cherries to a plate. Let the chocolate set for one hour.

To make shaped candies, coat a silicone mold with melted chocolate. Place in a cool spot for 15–20 minutes; repeat this process three times to form a sufficiently strong candy shell.

While the future candies are chilling in the freezer, melt the white chocolate in a double boiler.

Transfer the melted white chocolate into a piping bag.

Fill the empty spaces around the cherry in the mold. Return to the freezer for 5 minutes. Then, "seal" the candies with a layer of dark chocolate. Let the candies stabilize for 20–30 minutes, then carefully remove them from the mold. Use the remaining white chocolate to decorate the candies you made earlier.
