Black Currant Compote for Cake

Description

Colorful blackcurrant confit can be added as a filling layer when making pastries, cakes, etc. It is very easy to make at home and keep in the freezer until you decide to prepare a sweet dessert for tea time or coffee time.

    Prepare the listed ingredients. The berries can be used either fresh or frozen.

    Rinse the black currants in water and pour them into a cauldron or a saucepan with a non-stick bottom. Add the granulated sugar there right away as well. Remember that currants are a sour berry, so don’t skimp on the sugar!

    Pour in the water and place the container on the stove, turning on medium heat. Simmer the berries for about 10–15 minutes until soft so they release their color and aroma into the liquid. Add the agar-agar and stir. Boil for about 3 minutes.

    Turn off the heat and let the whole mixture cool slightly, but remember that agar-agar begins to set at 40 degrees. Line the mold with plastic wrap so that it extends over the sides, and pour the currant mixture into it. Place it in the freezer for at least 1 hour.

    After the specified time, remove the confit from the freezer and carefully remove the film. The dessert is ready for further use.

    Confit can be prepared in advance and stored in the freezer, wrapped in plastic wrap.
