
Apricot compote for winter
Description
The recipe won't take much time. There's no exact amount of fruit and water specified, as it's difficult to calculate. Apricots can vary in size and may take up slightly more or less jar volume. The main rule: add 200 g of sugar per three-liter jar to make the drink moderately sweet and tasty. I use one-liter jars, so I add about 60–70 g of sugar. However, any jar should be filled only one-third full. So, let's proceed step by step. The drink is ready to serve.

Step 1

Prepare everything you need: apricots, water, sugar, sterilized jars and lids. Let's get started!

Wash the apricots thoroughly. Select only healthy fruits for compote; overripe ones are not suitable as they will quickly lose their shape. Remove the pits. If the apricots are small, place halves into the jar; if large (like mine, apple-sized), it's better to cut them into 4 pieces. Fill sterilized jars one-third full!

Bring water to a boil. Fill the jar with boiling water to the brim and let it sit for 10-15 minutes. Cover with lids.

After 10-15 minutes, drain the water from the jars, add sugar, and boil the syrup for a couple of minutes.

Pour the syrup again into the jars, filling them to the brim. Seal the jars with a special key. Turn them upside down, check that the lids are not leaking, and leave them to cool in this position. After cooling, safely store them in a cellar or pantry. Apricot compote for winter is ready!
