
Strawberry compote for winter
Description
Sweetness and tartness are quite personal. So don’t add the full amount of sugar or citric acid called for in one go—always taste as you go. And I’ll tell you: jars keep for up to a year in a cool place.

Step 1

Prepare all the necessary ingredients. The amount specified above is for 2 liter jars of compote. Sort through the berries, trim off any bad parts, and wash them.

From water and sugar, make a syrup. Stir until the sugar has completely dissolved.

Arrange the berries in jars and pour the syrup over them. Use 1 cup of berries per 1-liter jar. Let the syrup steep for about 30 minutes.

Then pour the syrup back into the saucepan.

Bring to a boil again and add citric acid. Carefully! Taste as you go.

Pour the obtained syrup over the jars of berries. I do this through a sieve. Sterilize the jars and seal them. Place the inverted jars in a warm place until completely cooled.
