Description

In winter, compote is a perfect addition to any table, complementing pastries and desserts. Choose tasty, fleshy, and rich cherries. If desired, you can add mint to the cherries.

    Prepare the cherries and sugar.

    Wash the preserving jar thoroughly with baking soda, then rinse well under warm running water. Sterilize the jar by your preferred method—over steam, in the oven, or in the microwave. Place the lid in water and boil for 10 minutes. Transfer the cherries into the jar.

    Bring clean water to a boil, then pour the boiling water into the jar. Place the lid on the jar's rim and leave it for 10 minutes. After that, pour the water back into the saucepan, bring it to a boil again, and return it to the jar. Let it sit undisturbed for another 10 minutes.

    Finally, pour the compote into a saucepan, add sugar, and simmer for 2-3 minutes.
