
Cherry and peach compote for winter storage
Description
In winter, compote can be served at the table with any baked goods or dessert. You can also serve this aromatic drink at a festive table. Cherry and peach go perfectly together in flavor; if desired, you can add a little mint or cinnamon. Serve chilled.

Prepare the ingredients.

Wash the peaches and cut them in half, then remove the pits. Slice the peaches into wedges.

Wash the preserving jar thoroughly with baking soda, then rinse well under warm running water. Sterilize the jar and lid using your preferred method—over steam, in the oven, or in the microwave. Place cherries and peaches into the jar.

On the stove, bring clean water to a boil, pour the boiling water into a jar, cover the mouth of the jar with a lid, and let it sit for 10 minutes. After that, pour the water back into a saucepan, bring it to a boil again, and return it to the jar; let it sit for another 10 minutes.

Finally, drain the water into the pot, add sugar, and boil for one minute. If desired, you can add a little more sugar.

Return the compote to the jar.

Seal the jar tightly with a sterile lid and place it upside down. Cover the preserve with a warm blanket or cloth and leave undisturbed for 24 hours. After this time, transfer the preserve to the pantry.
