Blackcurrant compote with mint and lemon for winter storage

Description

The compote turns out very tasty; children might not like it much because of the mint, but adults will definitely appreciate this combination. The rich blackcurrant goes well with mint, and the lemon adds a bright, tangy note. We don't add too much sugar so as not to overpower all the vibrant flavors. The specified amount of ingredients yields 1 liter of compote. Ready to serve.

    Prepare the mint, lemon, and currants.

    Wash and sort the currants, discarding any spoiled berries.

    Rinse the lemon and pour boiling water over it. Cut the lemon into slices, rinse the mint.

    Wash the preserving jar thoroughly with baking soda, then rinse well under warm running water. Sterilize the jar and lid using your preferred method—over steam, in the oven, or in the microwave. Place the lemon, blackcurrant, and mint into the jar.

    On the stove, bring clean water to a boil, pour the boiling water into a jar, cover the mouth of the jar with a lid, and let it sit for 10 minutes. After that, pour the water back into a saucepan, bring it to a boil again, and return it to the jar; let it sit for another 10 minutes.

    Again drain the water into a saucepan, add granulated sugar, and simmer the compote for 2 minutes.
