
Plum compote
Description
I think plum compote needs no introduction. Surely everyone has tried plum compote and knows what this traditional Russian drink is like. Plums grow exceptionally well in our climate, so it would be a shame not to prepare this simple yet delicious drink. In winter, you take out a jar of plum compote, pour yourself a glass—ah, how delicious! You can't buy anything like this in stores. It's ready to serve.

Thoroughly rinse the plums, checking for any foreign substances such as leaves, twigs, etc.

Place plums into sterilized three-liter jars so that the plums take up slightly less than half the jar's volume.

Pour boiling water into the jars—enough so that the water completely covers the plums. Let stand for about 10-15 minutes.

Then we pour the water from the jars back into the saucepan.

Bring to a boil, then add sugar to the boiling plum water. Boil until the sugar dissolves.

Pour the resulting syrup back into jars. Fill the remaining space in the jars with plain boiling water.

We seal the jars with lids, turn them upside down, wrap them in a blanket, and leave them for 1-2 days. After that, the jars can be stored in a basement, pantry, cellar, or any other suitable place.

The compote can be stored for at least a year, or even longer. Serve chilled.
