
Rhubarb and red currant compote
Description
The recipe won't take much time. Use only fresh berries and rhubarb for the compote, with no signs of spoilage. If it turns out too sweet, dilute it with water or soda. The compote stores well in a cellar. The drink is ready to serve.

Prepare all the necessary ingredients for making rhubarb and red currant compote.

Wash the jar thoroughly and sterilize it using any convenient method. Sort the berries, removing stems and debris, rinse them, and let the water drain completely. Place the berries into the hot jar.

Wash the rhubarb, remove the outer skin, and cut into pieces. Add the rhubarb to the berries.

Pour boiling water into the jar and cover with a sterilized lid. Let it sit for 10 minutes.

Pour the contents into a saucepan, excluding the berries, add sugar, and bring to a boil. Simmer the syrup for 2-3 minutes, then pour it over the jar with currants and rhubarb, immediately sealing it with boiled lids.

Turn the jar of compote upside down and wrap it until completely cooled. Then turn it back and store.
