
Raspberry and mint compote for winter
Description

Rinse the mint in water and pluck the leaves from the stems. Rinse the raspberries in water as well, removing any spoiled berries if present.

In a clean washed jar, layer the berries and mint leaves.

Add sugar and lemon juice to the same mixture, or replace the juice with citric acid. You will need just a pinch of citric acid.

Boil water in a kettle or saucepan and pour it into the jar up to the shoulders.

Scald the lid with boiling water and immediately seal the compote for winter using a canning key. If the lid and jar have threads, screw them together. Check the seal quality by turning the jar upside down. Shake well to dissolve the sugar in the liquid.
