Gooseberry Compote for Winter

Description

Homemade preserves keep for a long time. Sterilize the jars and lids in advance. The recipe is designed for one three-liter jar or three one-liter jars. I seal them in one-liter jars because they are more convenient for me to store. After preparing the jars, prepare the gooseberries: sort through them very carefully and wash them. Do not use spoiled berries — preserves made with them will not keep, the jars may burst, and the flavor will be ruined. See all the details in the recipe The Preserve Is Ready for Winter Storage.

    Prepare the gooseberries, mint, sugar, lemon, three sterile one-liter jars or one three-liter jar, and sterile lids.

    Sort through the gooseberries; use only good berries. Rinse thoroughly a couple of times under running water and drain in a colander until the water runs off.

    Fill sterile jars with gooseberries, 150 grams per jar. If you don't have scales, fill approximately one quarter of each jar.

    Place a lemon slice and a sprig of mint on each.

    Pour boiling water over the jars of gooseberries, cover with lids, and leave for 20 minutes.

    After 20 minutes, drain the liquid from the jars; I do this using a special lid.

    Bring the compote with sugar to a boil.

    Fill the jars again, close with the lids, and seal.

    Turn the jars upside down and leave until completely cooled. Then you can turn them right side up and put them in the pantry for storage.
