
Red currant compote with mint for winter storage
Description
The drink is quick and easy to prepare. Red currants have a pleasant taste, and to make it more vibrant, we'll add just a small sprig of mint. We'll make the compote simply, without additional sterilization. If you enjoy homemade compotes, be sure to prepare a few jars of this bright and delicious drink for later use.

Prepare the currants and mint.

Fill a bowl with water, add the currants and rinse them; also rinse the sprig of mint.

Wash the preserving jar thoroughly with baking soda, then rinse well under warm running water. Sterilize the jar and lid using your preferred method—over steam, in the oven, or in the microwave. Place the currants into the jar, you can leave them on the stems, along with a small sprig of mint. Boil clean water on the stove, pour the boiling water into the jar, cover the mouth with the lid, and let it sit for 10 minutes.

After some time, pour the water into a saucepan, bring to a boil, and return it to the jar; let it sit for another 10 minutes.

Again, pour the water back into the saucepan, add sugar and cook for a minute.

Return the compote to the jar with the steamed currants.

Seal the jar tightly with a sterile lid and place it upside down. Cover the preserve with a warm blanket or cloth and leave undisturbed for 24 hours. After this time, transfer the preserve to the pantry.
