
Apple peel compote
Description
The drink is quick and easy to prepare. It often happens that children eat only peeled apples, or a lot of peel is left over after cooking some dish. Then I make this wonderful, budget-friendly compote. It turns out very tasty and takes just a few minutes to prepare. You can adjust the amount of sugar to your taste—I've indicated in the recipe how much I usually use. If you'd like to preserve a jar of this fragrant drink for winter, the ingredient amounts given here are for a 1-liter jar. Besides apple peels, you can add cinnamon, fresh or frozen berries and fruits for extra aroma. Today, I'm making my version with black chokeberry. Besides the excellent flavor, it also gives the compote a beautiful rich color. Give it a try—it's ready to serve.

Prepare all the ingredients. If you're using store-bought apples, be sure to thoroughly wash the skin and remove any wax before peeling them. This step can be skipped for homegrown apples.

Place the prepared peel into a saucepan or skillet and pour water over it.

Add sugar and mix. Place on the stove, bring to a boil, and cook for 2 to 5 minutes.

Then add black chokeberry or any berries of your choice. You can skip this step, but I like the rich color it ultimately gives.

Bring everything to a boil again and remove from heat. The apple peel compote is ready.

Strain the compote and let it cool slightly. It can be served either warm or chilled. Using exactly the same proportions, you can also prepare compote for winter storage by canning it in jars. To do this, sterilize the jars, place apple peels and any berries or fruits of your choice on the bottom. You can simply add one apple cut into pieces. Fill the jars to the top with boiling water, cover with lids, and let stand for 10 minutes. Then drain the water into a saucepan, add sugar, stir, and bring to a boil. Pour the boiling syrup back into the jars, seal immediately, and process as usual—turn the jars upside down and wrap them up until completely cooled. The result is a perfectly sweet and very tasty compote.
