
Compote from zucchini and alucha
Description
The ingredient quantities are given for a 0.75-liter container. The compote can be stored for 1 year if it contains pits, and 1.5 years if it is pit-free. Serve the drink for breakfast, lunch, afternoon snack, or dinner. Strain the compote through a sieve for children, removing the pulp. Serve chilled.

Prepare the listed ingredients.

Wash the zucchini in water, cut off the ends from both sides of the vegetable, and slice it into rounds. Then cut the rounds into portion-sized cubes and transfer the chopped pieces to a pot. Use only young vegetables without tough skin and seeds inside!

Wash the plums and add them to the container. If desired, you can remove the pits from the fruits.

Add granulated sugar and pour in lemon juice. Optionally, replace it with lemon acid, using 2 pinches.

Pour in the water and place the container on the stove. Once the liquid comes to a boil, simmer the compote for 20 minutes until the zucchini slices are tender. Scald the jar and lid with boiling water.

When the drink is ready, turn off the heat.

Pour the zucchini compote into a hot jar and immediately seal it with a screw-on lid or using a canning key.
