
Melon compote for winter without sterilization

Today I'm wondering why I've never made this drink before, as the recipe is so simple, I'd even say banal. I recall the first time I cooked melon compote, not expecting anything worthwhile. But it turned out delicious! So delicious, in fact, that there were hardly any jars left for other compotes! I suggest you try making this drink for winter. The beverage is ready to serve.

Prepare all the necessary ingredients. Wash the melon thoroughly and cut it in half. Remove the seeds and peel off the rind. Wash the lemon and cut it in half.

Cut the melon flesh into small pieces. The optimal size is about 2 by 2 centimeters. Bring water to a boil, add the melon pieces and cook for 2-3 minutes.

Then add the sugar and squeeze in the juice of half a lemon. If you don't have a lemon, add a pinch of citric acid. Simmer the compote for about 15 minutes. It will be ready when it develops a rich melon flavor.

Pour the hot compote into jars. I pour it in together with pieces of melon. Actually, this is the only compote I fill into jars with the fruit, because the melon turns out very tasty. Seal the jars with lids or close them with caps.
