
Cherry Compote for Winter
Description
Homemade preserves keep for a long time. Compote stores wonderfully even at home. The recipe has been tested over the years. I make compote with the pits left in; in my opinion, that kind of drink tastes richer and more aromatic. First, pick out burst and spoiled berries, then follow my instructions. Here we go—the preserve is ready to store for winter.

Prepare all ingredients.

Rinse the cherries and drain them in a sieve or colander until all the water has drained off.

Sterilize the jars and fill them approximately one-third full with sour cherries.

Pour boiling water over the berries, cover the jars with sterile lids, and leave for 15 minutes.

Drain the water without the berries into a saucepan, add the sugar and bring to a boil, stirring.

Pour boiling syrup over the cherries, seal the jars immediately, turn them upside down, wrap them as usual, and leave until cool. The compote will be ready to drink in a month. Happy preserving!
