Basil compote
Description
The recipe won't take much time. The drink gets its bright color specifically from red basil—green basil isn't used in preparation, as its aroma is more pungent. This drink isn't preserved for winter—over time, the drink's spicy flavor might start to turn bitter. That's why it's balanced with lemon juice and sweetness. Ready to serve.
Instructions
- 1
Step 1

Prepare the ingredients.
- 2
Step 2

Thoroughly rinse the stems of red basil, pluck the leaves and place them in a saucepan or pot.
- 3
Step 3

Add granulated sugar to the container, slice a quarter of a lemon into pieces, and add it to the other ingredients.
- 4
Step 4

Pour in warm water, place the container on the stove, and boil for 10 minutes from the moment it starts boiling.
- 5
Step 5

The basil compote is ready when the herb has imparted its color, flavor, and aroma to the liquid. Adjust the taste of the drink to your preference and turn off the heat. This compote is not preserved for winter, as it would lose its distinctive pungent flavor.

Step 6

Chill the drink and pour it into glasses, cups, or a pitcher. If you don't plan to drink the compote immediately, remove the herb leaves and lemon slices from the liquid—they will start releasing bitterness.
