
Apricot compote for winter
Description
There are many recipes for making compote. Some people simply put fruits in jars, add sugar, and pour boiling water over them. I agree, it's easy and quick. But I prefer making syrup. First, I cook a regular compote in a saucepan, then pour the syrup into sterilized jars and seal them. This way I get a whole jar of clear compote without fruit sediment, which I usually discard anyway. Serve chilled.

Prepare all the ingredients. Rinse the apricots thoroughly in plenty of water, cut them in half and remove the pits. Bring water to a boil, then add the apricots.

When the water with apricots comes to a boil again, add the sugar. Keep in mind that you can adjust the sweetness of the drink to your taste. For the specified amount of water, one cup of sugar is enough for me, but you can add more if desired.

Slice half a lemon into wedges with the peel and remove the seeds. Add the lemon to the compote once the sugar has dissolved. Boil everything for 10 minutes.

I only preserve the syrup itself in jars, without fruits. Pour the prepared syrup into clean sterilized jars and seal them. Turn the jars upside down, wrap them in a warm towel, and leave until completely cooled. Then store in a permanent storage place.
