
Apricot compote without sterilization
Description
The bright flavor of apricot compote will delight everyone without exception if you open a jar of this preserve during winter. Its aroma will remind you of summer, and even children will happily eat the ripe fruit. The preserve is prepared quickly—20-25 minutes—and the drink is ready to serve.

Prepare the ingredients.

Rinse the apricots in water, removing any spoiled fruits. Wash the jar with soda and rinse thoroughly. Place the fruits into the container up to the halfway point.

Boil water in a kettle or saucepan, then carefully pour the boiling water into the jar in several batches. Cover with a lid and let the small fruits steam for 10–15 minutes, larger fruits for 20 minutes.

Put granulated sugar into a saucepan or pot. If the apricots are too sweet, add a pinch of citric acid.

Replace the lid on the jar with a strainer lid. Pour the hot water into a saucepan and bring to a boil.

Pour the prepared syrup back into the jar with the apricots.

Scald the metal lid and screw it on tightly by hand or with a canning key. Turn upside down and let cool.

After cooling, transfer the apricot compote without sterilization to the pantry. Use as needed.
