Of course, we're talking about the Czech dish called "Pečené vepřové koleno." We've tried it and loved it, and we wanted to recreate it at home. Preparing Czech-style pork knuckle at home is actually quite simple. The main thing is the desire to do it. And our step-by-step recipe with photos will guide you through the process. Czechs usually serve the knuckle with sauerkraut and beer. We'll prepare the sauerkraut ourselves, but for the beer—we'll head to the store.     Wash the pork knuckle and place it in a pot to boil together with peeled carrot and onion. Boil for at least 1 hour if the knuckle is small, or about 2 hours if it's large. About 15 minutes before the end of cooking, add 0.5 tablespoon of salt and a bay leaf.

    Shred the fresh cabbage, lightly salt it, and knead slightly so that it releases juice.

    Peel the onion, chop it, and start frying in vegetable oil. It's better to do this right in the pot where you'll be stewing the cabbage.

    Add fresh cabbage to the onion and simmer for about 15 minutes. Then add sauerkraut and continue simmering.

    Remove the cores from the apples and cut them into thin strips. Add to the cabbage and simmer for about 20 minutes over low heat. About 5 minutes before the end of cooking, taste the cabbage and add salt if necessary. Then add sugar, mix well, and continue simmering.

    Let's make a sauce for the pork knuckle. Peel the garlic and ginger. Grate the ginger on a grater, and simply chop the garlic. Mix with mayonnaise and add some ground black pepper.

    Remove the cooked knuckle from the broth, transfer it to a dish suitable for baking in the oven. Brush with the resulting sauce.
