Peel the potatoes and grate finely. Place in a saucepan.

Using cheesecloth, squeeze all the juice out of the potatoes. You should end up with a uniform, dry mass in the pot and, separately in a cup, the potato juice.

Finely chop the onion and fry in a pan until golden brown. Then mix the fried onion with the ground meat. Add salt and pepper to taste.

Prepare the dough. Mix the eggs and flour with the potatoes.

Be sure to add to the dough the starch that has settled at the bottom of the cup with potato juice.

Salt the dough and mix until homogeneous.

Let's start shaping the dumplings. Place a small flat piece of dough on the table. Add the meat filling to the center.

Fold the edges of the turnover inward so that the dough completely covers the filling.
