1. Before preparing sausages in the air fryer, prepare the purchased pork casings in advance. Rinse them thoroughly in hot water and soak for about 40 minutes.

2. Wash the two types of meat—pork neck and beef shoulder—under running water. Cut them into convenient pieces. Then peel the onion and chop it as well.

3. Pass the meat and onion through a meat grinder twice. Season the resulting mince well with salt and add ground pepper to taste. Be sure to beat it thoroughly.

4. Place the soaked casings onto a special sausage-making attachment. They have become elastic and are easy to handle. Tie one end in a knot. Then put the meat mixture into the grinder's hopper and start filling the casings to form sausages.

5. Loosely fill the sausages and tie them with butcher's twine at equal intervals. Prick the casing in several places.

6. Bring water to a boil in a saucepan. Then place the sausages into the boiling salted water. Cook for 2-3 minutes. Remove the sausages from the boiling water and transfer them to an air fryer. Set the temperature to 180°C and cook for 30 minutes. Serve the sausages warm with a side dish and fresh herbs.
