    1. The recipe for making sausage at home involves a fairly complex process of preparing the ingredients. The most labor-intensive part is cleaning the intestines. Intestines are the ideal natural casing for sausage. Pork intestines work best. They need to be rinsed under running water, then turned inside out and cleaned. Wash them thoroughly again and disinfect them. This can be done in an alcohol solution (50 ml of vodka per 500 ml of water) or a baking soda solution (2 teaspoons of baking soda per 1 liter of water). Leave the intestines in the solution for 1–1.5 hours.

    2. During this time you can prepare the filling. It is best to use a combination of several types of meat. Lean pork and veal work very well together with a small amount of fatback. Wash the meat, pat it dry, and cut it into portion-sized pieces. Run it through a meat grinder.
