
Pea Sausage
Description
A tasty appetizer for any gathering. This sausage looks very much like a meat one, but it’s made from peas with spices and garlic. You can use pea flakes in the recipe, which will save a lot of time. Let’s see the recipe.

1. Prepare the ingredients — and let's get started! Besides these spices, you can use ones you like, for example: coriander, tarragon, ground chili pepper or flakes, ground bay leaf, etc.

2. Sort through the peas carefully and rinse until the water runs clear. Cover with warm water and let stand for 2–3 hours.

3. After three hours, the peas will absorb some of the water and swell slightly. Drain all the water. Bring three cups of water to a boil, pour boiling water over the peas, and cook uncovered, stirring occasionally. Add salt at the end.

4. Cook the pea puree until the mixture becomes thick and dense, so the future sausage holds its shape well.

5. Squeeze the juice from the beets and peel the garlic. Add the spices, beet juice (about 2–4 tbsp), and garlic to the pea purée. Purée with a blender until smooth. While blending, drizzle in the vegetable oil.

6. The amount of beet juice will control the color of the sausage. I added 4 tbsp.

7. Prepare a mold container—I have two 0.5-liter bottles; you can use one 1-liter bottle if you prefer. Cut off the necks and fill the buns with pea purée. Cover with plastic wrap and refrigerate overnight.

8. In the morning, remove the sausage from the plastic molds. Slice into rings and serve.
