
Moose sausage
Description
The dish is prepared without unnecessary complications. Moose meat is considered quite dietary and lean. Therefore, we will make sausages from this meat by adding pork. As spices, I used ground pepper of two kinds: red and black. It's simply amazing! The finished dish can be served at the table.

Step 1

Grind all types of meat and fat in a food processor. The secret to good sausage lies in not mincing too finely—the moose meat mixture should be chopped into medium-sized pieces. As for the pork, it can be ground slightly coarser. Add spices, salt, and sugar to the meat mixture. Include finely chopped garlic.

We fill the casing with minced meat using an electric meat grinder. For this, I used a special attachment coated with oil. Don't forget to leave about 8-9 cm of the casing free at the end so that we can tie the sausage later.

Once the casing takes on the appearance of a proper sausage, tie the ends securely with strong thread or string (twine). The sausage can be stored in the freezer for a very long time. Before serving, the sausages need to be fried. They can also be baked or boiled. Remember to prick the sausages several times with a toothpick before heat treatment to prevent them from bursting. Homemade moose meat sausage is ready!
