
Homemade Lamb Sausage

Perfect for the table and with drinks. Homemade lamb sausage is quite simple to make. The main thing is to prepare a well-washed and thoroughly cleaned intestine. Run the lamb offal and garlic through a meat grinder, add salt, pepper, and finely chopped fat. Stuff the intestine with the resulting mince, tie the ends, and boil for one hour. When the water comes to a boil, prick the casing in several places so the sausage does not burst. Store the cooled sausage in the refrigerator and serve it as an appetizer.

Pass the lamb offal through a meat grinder together with the garlic. Add finely chopped lamb suet, salt and pepper to taste, and mix well. Stuff this mixture into a thoroughly washed intestine and tie the ends.
