Peach Cocktail
Description
The drink is quick and easy to prepare. Bring water to a boil in a saucepan. Add peaches and cook for 1 minute, then transfer the peaches into ice water to cool. Remove the peaches from the water and slice them. In a bowl, combine the sliced peaches, orange liqueur, sugar, and salt. Let the mixture sit in a warm place for 20 minutes to draw out the peach juice. Blend the peach mixture in a blender or food processor until smooth. Immediately add tequila and lemon juice. (The peach-tequila puree can be stored in the refrigerator for up to 4 hours.) Pour into a pitcher and add peach nectar. Fill 8 glasses with ice and garnish with mint sprigs. Slice the remaining 2 peaches into 8 slices and use them to decorate the rims of the glasses. Pour the cocktail into the glasses.
