Take a watermelon and cut it crosswise. Put one half in the refrigerator right away. You can make fresh juice from a whole watermelon. But I don't like when it sits in the fridge, so I'll prepare only half to drink it immediately.

Cut the watermelon half into pieces. Remove the seeds. Cut the flesh away from the rind. Chop the watermelon into pieces and place them into a blender.

We wash the mint. Pick the leaves off the stems. Get the honey ready—it should not be crystallized. I have a small jar of liquid flower honey left. Pour a couple of teaspoons into the blender. You can add ice right away if your blender can handle it, or you can grind the ice separately and add it later, just before serving.

Blend all ingredients in a blender until smooth. The mint leaves should turn into a green paste, thereby giving the watermelon a slightly greenish tint. Don't worry, this won't ruin the color, but rather enhance it.
