
Apple Croquettes
Description
The recipe won't take much time. Kokroki can have various fillings; I'll show a version with apples, the amount depends on the sizes you choose. I ended up with 8 medium-sized pastries. Serve the kokroki with tea, coffee, or milk; any option will be very tasty. They can be served with tea or coffee.

Prepare all the ingredients.

In a deep bowl, combine sour cream, sugar, salt, and egg.

Stir and add the flour.

Knead a soft dough.

Let the dough rest for 20 minutes, covering it with a clean towel, after which divide it into 8–10 pieces.

On a flour‑dusted surface, roll out each piece of dough into a circle, 2–3 mm thick. Peel the apples, cut them into cubes, and place the filling on one edge.

Cover the filling with the second portion of dough and seal the edges like dumplings.

Form all the pies and place them on a baking sheet lined with parchment paper or a silicone mat. Prick each pie with a fork and brush with egg yolk. Bake at 200 °C for about 15–20 minutes.

Transfer the ready kokroki to a plate, cover with a towel, and let them rest for a few minutes.
