
Coconut Cake

Prepare all the necessary ingredients. The eggs for the sponge cake should be cold, so put them in the refrigerator in advance. Take the butter out of the fridge and let it sit at room temperature for about an hour so it softens and can be easily whipped.

We will bake two sponge cake layers. For the first one, mix 5 eggs and 1 cup of sugar, then beat well with a mixer until a thick, light foam forms.

Now gradually start adding the flour, incorporating it literally one tablespoon at a time. If you have a small special sieve, you can use it to add the flour, constantly stirring the dough with one hand while shaking the sieve with the other.
