
Coconut kefir cake
Description
Delicious baked goods for the whole family. I used only coconut flour when making it. You can also mix the coconut flour with fine coconut flakes—the cake’s texture will be even more interesting. If you like, add raisins or dried apricots to the batter; it will be truly incomparable. The bake is ready. Serve at the table.

Prepare all the necessary ingredients.

Crack the eggs into a spacious bowl and add sugar.

Beat these ingredients with a mixer until you get a fluffy, pale mixture, about 1 minute.

Add melted butter, kefir, salt, and baking soda to the eggs beaten with sugar.

Sift all the wheat flour.

Whisk the flour into the liquid mixture until fully combined.

Add coconut flour.

Fold the coconut flour into the main dough using a spatula. The finished dough is very sticky, like thick pancake batter in consistency.

Line a loaf pan with baking parchment, then spread in all the batter and smooth the surface with a spatula.

Bake the coconut loaf cake in an oven preheated to 180 degrees for 40–45 minutes. Then cool the finished loaf cake completely. Before serving, dust with confectioners’ sugar if desired.
