Coconut chutney

Description
The sauce takes just a few minutes to prepare. There are hundreds of chutney recipes; I'm offering my own version. The finished sauce can be stored in the refrigerator for several days.

Prepare all the ingredients.

Break the coconut and separate the flesh from the shell. Cut the flesh into slices suitable for grinding. Peel a piece of ginger.

Squeeze the juice from the lemon. In a blender, grind the cilantro, garlic, ginger, and coconut together with the lemon juice.

Salt the chutney and add a little liquid (coconut or plain water) to achieve the desired consistency. I prefer a thinner chutney.
