
Coconut waffles with whipped cream

1. Preheat the oven to 175 degrees with the rack in the center. Spread the coconut flakes on a baking sheet and bake in the preheated oven for about 6 minutes, until golden brown. Remove from the oven and set aside.

2. In a medium bowl, beat together coconut oil, eggs, agave nectar, vanilla extract, and banana puree. In a small bowl, mix together coconut flour, salt, and baking soda.

3. Add the flour mixture to the egg mixture and whisk until combined. The mixture will begin to thicken. Add the toasted coconut flakes and stir to combine. Let the batter rest for 5 minutes while you plug in and preheat the waffle maker.

4. If you have a round waffle iron, use about 3/4 of the batter for each waffle.

5. To make whipped cream, beat heavy cream with maple syrup in a bowl.

6. Place the waffles on individual plates. Top with a generous amount of whipped cream. Garnish with several banana slices and chocolate shavings. Sprinkle with coconut flakes on top and serve.
