
Coconut cookies with condensed milk

1. Prepare the ingredients; take the butter out of the refrigerator in advance so it can soften. Alternatively, place it in the microwave for 20 seconds. Let's get started!

2. Using a mixer, beat the butter with sugar until creamy.

3. Add eggs one at a time to the oil base, continuing to whisk.

4. Add the sifted flour, starch, baking powder, and coconut flakes. Use a mixer to blend the dough until smooth and uniform. You can add a drop of vanilla extract or vanilla sugar.

5. The finished dough is very light and tender, with a pronounced buttery aroma. Turn on the oven to 170 degrees and preheat.

6. Line a baking pan (25 by 25 cm or 22 by 27 cm) with parchment paper, place the dough inside and smooth it out with a spatula. Bake for 10–12 minutes.

7. Remove the finished biscuit from the mold and leave it to cool on parchment paper.

8. Cut the cooled biscuit into 2 parts, place one part on top of the other, trim the edges and smooth them. If the pan size is larger, the pastries will be thinner, and their quantity will increase.

9. Transfer the boiled condensed milk into a piping bag fitted with a large opening tip (I used a star tip). Pipe the condensed milk between the biscuit layers.

10. Decorate as desired. I dusted with powdered sugar and piped stars using a pastry bag. You can use chocolate, whipped cream, berries, or fruits for decoration. Enjoy!
