
Coconut Muffins
Description
Coconut cupcakes are very quick and easy to make. Just mix all the ingredients, put the cupcakes into a preheated oven, and wait until the kitchen fills with the enticing aroma of fresh homemade baking. The finished cupcakes stay fresh for a long time if stored in a sealed food container or simply covered. Serve with tea or coffee.

1. Preheat the oven to 170 degrees. Prepare the dry mixture by combining flour, baking powder, and a pinch of salt.

2. Using a mixer, knead the dough by adding melted butter, 150 grams of sugar, and eggs.

3. For flavor, if desired, you can add a pinch of vanilla to the dough. While mixing at low speed, gradually start pouring in the milk. Set aside a couple of tablespoons of milk for the cream.

4. Divide the dough into portions and place them into molds, then bake in the oven for 15-20 minutes.

5. Beat 230 grams of butter, the remaining sugar, and coconut milk at high speed until smooth and thick. Using a pastry bag, pipe the prepared cream onto the cooled cupcakes.
